Mushrooms, Cheese & Chilli Toast

Ingredients

1 tsp olive oil

120g mushrooms sliced

1 garlic clove thinly sliced

1⁄2 long red chilli thinly sliced

salt & pepper, to taste

2 thin (40g) slices rye bread (or gluten free) toasted

80g cottage cheese

1 sprig of fresh basil leaves picked

 

Method

  1. Heat oil in a large non-stick frypan over medium-high heat. Cook mushrooms, stirring only after 3 minutes, for 4-5 minutes until golden. Add garlic and chilli, toss with mushrooms for cook for another minute. Season with salt and pepper.

  2. Spread toast with cottage cheese, top with mushroom mixture and scatter over basil leaves to serve.
