Italian Tuna Rice Cakes

Ingredients
2 thin rice cakes
90g tin of tuna in brine drain
30g cherry tomatoes chopped
25g green olives chopped
1⁄2 lemon juiced
salt & pepper, to taste
Method
Mix tuna, tomatoes, olives, lemon juice in a small bowl to combine. Top rice cakes with tuna mix. Season with salt and pepper.
