Haloumi & Hummus Wrap
PREP 10 MIN - COOK 5 MIN - SERVES 2
Ingredients
1 tsp ground cumin
75g haloumi sliced
1 small (40g) wholegrain wrap or tortilla (or gluten free)
2 tsp hummus
1⁄2 cup (20g) baby spinach leaves
1⁄2 Lebanese cucumber cut in matchsticks
1⁄2 medium carrot cut in matchsticks
1⁄2 lemon juiced
salt & pepper, to taste
Method
Spread cumin on a small plate, add haloumi slices and toss to coat.
Heat a non-stick frypan over medium-high heat, add haloumi and cook for 1-2 minutes, each side, until golden. Remove, then using same pan, add wrap and warm until golden.
To assemble wrap, spread hummus on wrap, layer with spinach leaves, cucumber, carrot and haloumi. Squeeze over lemon juice and season, roll up wrap to serve.
