Greek Bean Salad
PREP 10 MIN - SERVES 1
Ingredients
2 tsp red wine vinegar
1 tsp olive oil
1⁄4 tsp dried oregano
salt & pepper, to taste
50g cherry tomatoes halved
1⁄2 green capsicum deseeded & diced
1 Lebanese cucumber diced
1⁄4 red onion finely diced
1⁄2 tin of cannellini beans (400g) drained & rinsed
20g kalamata olives deseeded & roughly chopped
30g feta crumbled
2 sprigs of parsley roughly chopped
Method
Add tomatoes, capsicum, cucumber, onion and beans and mix well. Adjust seasoning.
Transfer to a serving bowl and top with olives, feta and parsley to serve.
