Falafel Pita with Hummus

Ingredients

3 falafel balls

1 tbs (20g) hummus

2 tbs (40g) cottage cheese

1 small (50g) wholemeal pita bread or pocket (or gluten free) top split open

1⁄2 cup (20g) baby spinach leaves

1⁄2 medium tomato thinly sliced

1⁄4 red onion thinly sliced

2 sprigs of parsley roughly chopped

salt & pepper, to taste

 

Method

  1. Preheat oven to 200°C and line a baking tray with baking paper.

  2. Place falafels on prepared baking tray and bake for 10-15 minutes until golden and heated through.

  3. Meanwhile, mix hummus with cottage cheese and spread inside pita pocket.

  4. Toss spinach, tomato, onion and parsley together and season with salt and pepper.  Add salad and falafels to pita pocket and serve.

  5. Whisk vinegar, olive oil, oregano, salt and pepper in a large bowl to combine.
