Blueberry & Quinoa Porridge

Ingredients
1⁄4 cup (45g) white quinoa rinsed
1⁄2 cup (125ml) water
1 tsp vanilla extract
1⁄4 cup (65ml) coconut milk, unsweetened (carton)
2 tbs (40g) cottage cheese
1 tbs coconut flakes
30g fresh or frozen blueberries
1 tsp honey (rice malt syrup or maple syrup)
Method
Place quinoa, water and vanilla in a small saucepan over medium heat. Bring to a simmer and cook for 12-15 minutes until tender.
Stir through coconut milk and cottage cheese and transfer to serving bowl.
Sprinkle with coconut flakes, blueberries and drizzle with honey to serve.
