Beef Nachos

Ingredients

1 tsp olive oil

250g beef mince

1⁄2 onion finely diced

1 medium tomato finely diced

2 tsp tomato paste

1⁄2 cup (125ml) beef stock

1⁄2 cup (20g) baby spinach leaves finely chopped

salt & pepper, to taste

Guacamole

1⁄2 avocado

1⁄2 lime juiced

Salsa

1 medium tomato deseeded & diced small

1⁄2 spring onion green ends, finely chopped

1 sprig of fresh coriander finely chopped

1⁄2 lime juiced

1 tsp olive oil

To serve

60g natural corn chips (low salt)

40g cheddar (tasty) cheese cubed

 

Method

  1. Heat oil in medium pan over medium heat. Add onion and saute until translucent. Turn the heat to high and add mince, breaking it apart while cooking.

  2. Once mince is fully cooked add the diced tomato and paste. Mix in well and add stock and spinach. Continue cooking until liquid is almost evaporated but sauce is still moist. Adjust seasoning. Transfer to a serving bowl.

  3. While mince is browning, make guacamole by mashing avocado and lime juice together in a small bowl. Adjust seasoning.

  4. To make salsa, mix salsa ingredients well together in a bowl.

  5. Serve bowls of beef, salsa and guacamole with corn chips and diced cheese.
