Asian Chicken Stir-Fry with Broccolini
PREP 10 MIN - COOK 10 MIN - SERVES 4
Ingredients
1 tbs (20ml) sesame oil
550g chicken breast cut into strips
1 garlic clove grated
1 tsp fresh ginger grated
1 onion thinly sliced
1 bunch of broccolini chopped into pieces
2 medium carrots finely sliced on the diagonal
3 tbs (60ml) soy sauce (or tamari if gluten free)
1 lime zested & juiced
salt & pepper, to taste
2 cups (320g) pre-cooked brown rice prepare to packet instructions
40g bean shoots
1⁄2 bunch of fresh coriander leaves picked, to serve
2 tbs sesame seeds toasted, to serve
Method
Heat a large non-stick frying pan over high heat and add sesame oil. Add chicken, stirring constantly for 4-5 minutes.
Add garlic, ginger and onion and stir for another minute. Add broccolini, carrots, soy sauce and lime juice. Stir-fry for 3 minutes, or until the veggies are golden but still with a bit of crunch. Season with salt and pepper to taste.
Divide rice between plates, add stir-fry and top with the lime zest, bean shoots, coriander, sesame seeds and extra pepper to taste.
